A perfectly balanced cookie featuring earthy matcha, sweet white chocolate, rich dark chocolate, and crunchy nuts. These cookies have crispy edges and a soft, chewy center.
Ingredients (8-10 Cookies)
Butter Base
- Unsalted butter: 130g, melted
- Brown sugar: 95g
- White sugar: 48g
- Egg: 55g (1 small egg)
- Vanilla extract: 3g
- All-purpose flour: 175g
- Matcha powder: 12g
- Baking soda: 1g
- Baking powder: 1g
- Salt: 1.5g
- White chocolate: 60g, chopped
- Dark chocolate: 60g, chopped
- Macadamia nuts/walnuts/almonds: 80g, roughly chopped
Instructions
Step 1: Melt the butter Melt butter in microwave or using double boiler. Let cool for 5 minutes.
Step 2: Mix sugars Add brown sugar, white sugar, and salt to melted butter. Whisk until combined.
Step 3: Add egg and vanilla Add egg and vanilla extract. Whisk until smooth.
Step 4: Add dry ingredients Sift together flour, matcha powder, baking soda, and baking powder. Add to wet mixture and fold with whisk or spatula until no flour streaks remain.
Step 5: Add mix-ins Fold in white chocolate, dark chocolate, and nuts until evenly distributed.
Step 6: Chill the dough (Required) Refrigerate for 30 minutes to 1 hour.
Step 7: Bake Scoop dough into 60-70g portions (about 5cm diameter). Bake at 170°C (340°F) for 9-11 minutes until edges are set and centers are slightly soft.
